    Morning, Ms. Sue, and thank you! The more I learn, the more my red flag signal goes up. When writing the boards to become a nurse, I learned that almost ALL of the answers had truth in them, with the exception of this word, or that phrasing. If you didn't know WHY this part was wrong, it would have been easy to "choose" the wrong answer. I watched Dr. G for a while, to hear him out. He always and I mean ALWAYS, puts up his "I know what I'm talking about because I am a Dr.". Well, you are also human! Then the red flags begin to show themselves. Him drinking glasses of olive oil was number one. Then his- I believe in it so much that I bought a olive grove and am now selling this high dollar, "clean oil". If we can get folks to stop and ask- First, before I buy into this, or that. Is there any lifestyle changes that I can make, to get the same nutrition, without having to spend "the sale price" of 45.00 a bottle, for THIS prescribed healthy medicine? The reviews are scary to me. Not that his olive oil isn't beneficial when used as it's supposed to be, but people adding it to their coffee, and just drinking glasses of it??..🙁 Make some healthy bread, and make a olive oil dip. But, my goodness, don't do that to your body by drinking a glass full! YIKES! I learned, I cannot use any olive oil from Italy. There is something in the ground that is in all of their oils, that I have tried. Their oils, give us upset stomachs, and/or heartburn. Greek olive oil does not, but over indulgence of theirs can occasionally, livin up the line to the powder room. Olive oil from Israel- NO one in our house is bothered at ALL, no matter how it is used! So, I keep Greek and Israeli olive oil on the shelf, and use them both.

    Thank you for this info. I understood Gundry to say these lectin containing foods are okay if properly prepared; removing the skin and seeds or soaking or pressure cooking. I followed his regime and did heal my gut and then added whole ancient grains etc after. i appreciate the scientific info you gave but feel it does intersect with Gundry. Sometimes we need to either use or abstain from foods in the healing process because of the damage we’ve done, until we can once again enjoy all of God’s foods. It worked for me. I am grateful to you both.

    I do appreciate what you have said about Lectins. Long ago I realized Dr Gundry would contradict his own scare information. He is a snake oil salesman. I don’t eat most vegetables because of oxalates. I inherited the inability to get rid of oxalates in food, thus a lifelong history of kidney stones. I also have a pretty strong reaction to nightshade foods because of the solanine. Those foods cause me to have a form of Rheumatoid Arthritis. There are ways to deal with these issues and still get the nutrition needed.

    I followed along with the recipe in the book and I did not have success with it. There doesn’t seem to be a high enough percentage of water. 500ml of water for 1250g of flour is only 40% hydration. Seems like it should be much higher.

    Hi. I got a used zohirushi plus bread machine and listened to Ashley’s video for setting dough cycle and I did what she said to do for memory 2 and doubled checked it but when I pushed start the time popped up for an hour later instead of 35 minutes. Do u know what went wrong?

    I have to drink about a gallon of water a day for my kidneys. I just put a wedge of lemon in my water. Yummy! Urine also helps rid the body of toxins. Think water soluble vitamins, too much of a good thing can be bad, the excess is usually excreted through urine.

    Such an amazing recording! I already have a copy of your little spiral bound cookbook and have started making your bread which we love. We stopped for a while to do low carb for my husband’s weight loss but I became so constipated that I refused to do it any longer. We are restarting again and I plan to expand the use of fresh milled flour and remove white flour from our diet. We will let you know how it goes. Again, thank you!

    Hey Ms Sue I'm asking the same as below. I just bought a lot of groats, not realizing they have a short shelf life. I am cooking them and freeze dying. So, I will get busy and get them cooked ASAP because we love out oats, but, we can't eat as much as I got in 6 months. UNLESS we can vacuum seal and put in the freezer.

    I started milling my own wheat berries, after coming across Sue Beaker UA-cam. Started baking bread, pancakes, muffins and oh the changes it has made. I went from one bathroom trip a week (not kidding) to every morning!! You don't know how miserable it is to live with those issues, over the counter fiber didn't help but only made it worst, I will never go back to dead bread!! Thank you God!!

    I have a bit of a bread story. I am 64 years old and have been whole foods plant based vegan for about 6 years. It made a huge difference to me and my health is good (I am the only vegan in my family and don't try to tell others what to do - it's just best for me).One thing that I have always struggled with though is brittle nails. The only time they were strong is when I was pregnant with my children (probably due to hormones). I started making bread with whole grains (and sourdough) in March and now - in June - my nails are amazing! The whole grain bread is the only thing that I have changed (was doing sourdough before) so I really think that using the fresh, whole grains is the reason. My best friend turns 60 this week and my gift to her is that I am bringing all the ingredients to her house and will bake a bread with her, giving her the things she needs to keep making bread. 🙂 One thing: I can't yet afford to buy a mill so have been soaking the grains then putting them through a blender. It actually works very well!

      @@susiet2150 Sure :-) SOURDOUGH BREAD - BASIC FOR 1 LOAF • 1/3 cup each: whole rye & red lentils • 1 cup each whole emmer & spelt Soak at least 24 hours on the countertop or up to 48 hours in the fridge in water with a splash of apple cider vinegar. • 1 portion of sourdough starter • 1 t salt • About 1 ½ cups of water (more if needed) • A few tablespoons of spelt flour, as needed to firm up the mixture (store bought or made in my coffee mil) Put soaked and rinsed grains in a blender with the water (can be done in two batches if the blender is small). Pour into a bowl. Add the sourdough and mix well. Stir in salt and mix well again. Add more flour as needed (2 T at a time) until it slightly pulls away from the bowl but is still very wet. Rest 30-60 minutes and mix again. Can be mixed and rested again if desired. Pour into a floured bread pan, cover and let rise (6-10 hours as needed). Bake at 220c for 45 minutes. Cover the bread with aluminium foil and bake another 45 min at 180c. You will have to convert the celsius to fahrenheit but it is about 430 f and 350 f. It is a very dense, European style bread (I live in Norway)

    That's the problem with information is that when you write a book you believe one thing and as new information comes out, you update and revise that information to include or disregard information of there beliefs that you previously held, but he is very healthy and promotes very healthy living and has helped a lot of people with diseases That whole grains alone will not heal.

      We make bread every day and sometimes multiple times a day, so having to vacuum seal it every time we need it may not be feasible. We keep ours in the refrigerator or freezer, and it keeps it fresh enough for use.

    I have a question about oil in freshly milled bread. Literally ALL the recipes I see online have 4-8 Tbsp of oil in a 2 lb loaf. That’s too much. I find that the freshly ground wheat seed gives enough fluffyness to the bread and probably has enough fat to it and it yields a great loaf. I use only 2 Tbsp and even 1 Tbsp of oil makes the loaf very soft and moist. Please try it. 2 parts red wheat, 1 part white (I find that more red gives a superior sandwich loaf).

      When making our 2 lb basic loaf, we use 1/3 cup of our extra virgin olive oil and find that this amount makes a perfect loaf. Thanks for asking.

      @@BreadBeckers That’s a lot of unnecessary calories. Around 640 cal just from oil. Means eating less of the bread to keep weight down. For those conscious about their calorie consumption, please know that the loaf can be just as good with a lot less oil and calories because freshly milled wheat flour is naturally moist and very forgiving giving an excellent result even with little oil. (Majority red wheat in recipe for best result). Just my 2c. 🪙🙂🍞

      You do not have to use that particular recipe. There are many recipes that use freshly milled flour, and that is just one example. You are more than welcome to modify any recipe to your benefit, and it is very easy to do so. Also, you may find episode number 48 very beneficial. Thanks for commenting. Hope that helps!

      @@BreadBeckers I have seen many people posting recipes on UA-cam and blogs for freshly milled flour and they are all pretty much the same when it comes to oil amount - a LOT of oil. So far I haven’t seen any recipe with less. If anyone wants to try with less oil, you’re going to be very successful and be able to eat more of this delicious bread for fewer calories. Just wanted to get the word out. I had watched that episode recently and really enjoyed it, thank you.

    Question...you talk about "gluten free" and how it is a myth. I've been trying to figure out what you meant. I went GF about 10 years ago. My pain went away and my energy went up. Anyway, my family has been watching and learning from you about milling and here is my question: Do you mean that it isn't "gluten" that bothers people, but the fact that they separate so much of the wheat that it causes issues with the intestines, etc? With my ADD I have a hard time watching long videos, however I find your videos very interesting and packed with info. I'm taking notes and hoping and praying to get the mill and wheat soon. My big concern is the gluten issue when we do get it. What do you have to say about that? I believe you are an answer to my prayers and hope I am right. Thank you!!!

    Question - I have just started eating bread with freshly milled flour. I am having some bloating and gas, but I am going to the bathroom a lot! Will my body adjust?

      Yes it should totally adjust as your body begins to eliminate all the toxins and buildup in your gut.     If we autolyse wouldn’t that take care of the rough texture?

      Yes, autolyse allows your bread time to hydrate as well. The lecithin will allow the bread to hold together better and be lighter and fluffier.

    I am excited to try homemade bread! I have a grain mill and grains on hand. I was diagnosed years ago with fibromyalgia and after seeing your interview with Michal Grappe, I’m excited to see if it will make a difference in my health. I love bread and have missed eating it for about 10 years.
